Earl Grey Tea Loaf

There is little I crave more than a cup of tea, pair that with this homemade earl grey loaf, and I'm in heaven.

Ingredients

  • 300ml water
  • 2 earl grey teabags
  • 200g mixed dried fruit (mixed peel, cranberries, sultanas, blueberries)
  • 1 orange, zest of
  • 275g plain flour
  • 125g muscovado sugar
  • 2 1/2 tsp baking powder
  • 1 tsp mixed spice 
  • 2 eggs
  • 2 tbsp apricot jam to glaze

  • 300ml water
  • 2 earl grey teabags

  • 2 1/2 tsp baking powder
  • 1 tsp mixed spice
  • 2 eggs
  • 2 tbsp apricot jam to glaze

Preheat your oven to 180°C/350°F/gas 4.

Pop a pan on medium heat and bring your water to a boil. Drop to a simmer, add the teabags, dried fruit and orange zest and simmer for 2-3 minutes.

Set aside to cool to room temperature.  This is important as you don’t want to add hot liquid to an egg mix or it’ll end up scrambled.

Mix flour, sugar, baking powder and mixed spice in a bowl. Add the fruit mix (liquid and all) and mix into a smooth batter. Finish by whisking in your eggs one at a time.

Pour your batter into a lined and greased loaf tin.

Bake in your preheated oven for 1 hour.

Whilst it’s still hot, slather on 2 tbsp of apricot jam. Leave to cool. Slice and serve with lashings of butter and, of course, a nice cup of tea.
