Did someone say soup season?
Ingredients
- 2 large potatoes, cut into chunks, skin on
- 1 vegetable stock cube
- 4 courgettes, chopped
- 1 leek, finely sliced
- 2 garlic cloves, thinly sliced
- 100g cheddar cheese, grated
- Salt and pepper to season

Add the potatoes to a large pan and cover with vegetable stock. Bring to the boil, and cook with lid on for 10 – 12 minutes until they’re tender.
Add in the courgettes, leeks and garlic and simmer with the lid on for 10 minutes. Chuck in the cheese and season with salt and pepper. Blitz all together to your desired consistency. Add a bit of hot water if you want it a bit looser, and you’re done!
