I love an easy recipe!
Ingredients
- 1 ripe avocado
- 3 tbsp white wine vinegar
- ½ lemon, juiced
- 5 tbsp oil
- Salt and pepper for seasoning
- 1 large courgette, made into ribbons
- 25g pecorino, shaved
- Salad leaves
- Small handful of pine nuts, toasted

Into a blender add the avocado, vinegar, lemon and oil and give it a season. Blitz until smooth.
Ribbon your courgette with your peeler and in a bowl, mix it with a glug of the dressing. Add in your pecorino and salad leaves and toss. Finish it off with some pine nuts. And that’s it!
