Cold Pasta

Ingredients

  • 6 large tomatoes, beautifully ripe
  • Large handful fresh basil
  • Good quality oil
  • Salt and pepper for seasoning
  • 50g parmesan
  • Pasta of your choice

In a blender put the tomatoes, basil, a good glug of oil (I used one with garlic and chill in, but plain is fine!), generous seasoning and the parmesan. Blend into a very fine sauce. Hopefully your blender is powerful enough you won’t need to sieve it.

Meanwhile cook your pasta in boiling salted water until al dente. Drain and run under cold water to cool the pasta down.

Add the pasta to the sauce, mix through and honestly, it’s one of my favourite summer lunches.
