Cold Feta & Roasted Tomato Pasta

Ingredients

  • 200g feta cheese
  • 2 tbsp olive oil
  • 2 tbsp natural yogurt
  • Salt and pepper to taste
  • 250g fusilli pasta
  • 250g cherry tomatoes on the vine
  • Dried oregano for garnish

Preheat the oven to 200°C/400°F/gas 6.

Place the cherry tomatoes on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast in the preheated oven for about 15-20 minutes or until the tomatoes are blistered and slightly caramelized.

In a blender, combine the feta cheese, olive oil, yoghurt, salt, and pepper. Blend until smooth and creamy. If the mixture is too thick, you can add a little pasta water to loosen it up.

Cook the fusilli pasta according to package instructions. Once cooked, drain and rinse the pasta under cold water to stop the cooking process.

In a large mixing bowl, toss the cold rinsed pasta with the whipped feta sauce until well coated.

To serve, sprinkle dried oregano over the pasta and top with the hot roasted cherry tomatoes on the vine.
