Chocolate Fondants are the ultimate romantic dessert. When cooked right they have delightfully oozy centres and rich indulgent flavours.

- 175g dark chocolate
- 25g unsalted butter, softened
- 175g caster sugar
- 2 eggs
- 1 tsp vanilla extract
- 25g plain flour

Preheat your oven to 200°C/400°F/gas 6.
Melt your chocolate over a bain-marie. Once melted, take off the heat and set aside.
Cream together your butter, vanilla and sugar. When smooth and fluffy, crack in an egg at a time and whisk. Try to get lots of air into it. Add your flour and combine.
When your chocolate is at room temperature, slowly add to the mix.
Decant into greased ramekins.
When your oven is up to temperature cook for 8 minutes. Alternatively, you can prep these ahead and keep them in the fridge and instead cook them in a preheated oven for 9 minutes when you’re ready.
Serve immediately for a beautifully soft and oozy centre. Finish with a drizzle of cream.
