Chimichurri Courgette Salad

Ingredients

  • 2 courgettes, chunked into 1cm slices
  • salt, pepper and oil for roasting 
  • 1/2 bunch parsley, finely chopped
  • 1 tbsp oregano
  • 1 red chilli, finely chopped
  • 3 cloves garlic, grated
  • 3 tbsp red wine vinegar
  • 4 tbsp olive oil
  • salt and pepper for seasoning
  • 1 lemon, zest of

  • 2 courgettes, chunked into 1cm slices

  • 4 tbsp olive oil

Prepare your courgette and toss it with a sprinkle of salt and pepper and a drizzle of oil. Roast in a preheated oven at 220°C/425°F/gas 7 for 15 minutes (giving them a flip halfway through).

To make your chimichurri sauce, take off the woody ends of the parsley and finely chop. Prepare your ingredients as stated above and mix them together. Check for seasoning and you’re done.
