Roasted chickpea - pack 'em in your lunchbox, scatter them in a salad, or serve them up on top of your favourite curry for some added crunch!
Ingredients
- 400g drained chickpeas
- 1 tsp smoked paprika
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1 tsp oil

Preheat your oven to 180°C/ 350°F/gas 4.
Drain off the chickpeas and cover with any oil with a high smoking point (rapeseed, vegetable, sunflower).
In a separate bowl combine your spices and then sprinkle over your chickpeas, giving them a really good toss so they’re evenly coated.
Scatter in a single layer onto a baking tray and pop into your preheated oven for 35 minutes.
