Tik Tok made me do it. A food trend that sounds incredibly odd but actually delivers. Easy, peasy chickpea cookie dough.
Ingredients
- 1 x 400g tin of chickpeas, drained and rinsed
- 80g nut butter
- 1 tsp vanilla bean paste
- 6 tbsp oats
- 2-3 tbsp maple syrup (depending upon how sweet you like it!)
- 1/2 tsp salt
- 60g chocolate chips

Add everything to a food processor and blitz into a smooth paste. Taste the dough and add more sweetness if you need to. Fold in the chocolate chips, serve, and enjoy! Your dough will keep in the fridge for up to one week.
