Baked for a healthier spin on the classic chicken nugget. These little mouthfuls of proper poultry are a firm family favourite.
Ingredients
- 500g chicken breasts
- 25g grated Parmesan cheese
- 2 egg
- 1 tsp paprika (optional)
- 1 tsp garlic powder (optional)
- generous pinch of salt & black pepper
- 100g plain flour
- 150g cup breadcrumbs (panko)

Preheat your oven to 180°C/350°F/gas 4.
Dice your chicken into mouth-sized chunks. Whisk up your eggs into one bowl, pop your flour into a second, and in your final bowl pop your breadcrumbs, garlic granules, paprika, salt, pepper and parmesan cheese.
Now follow this simple process with each chicken chunk: dip your chicken into the flour; SHAKE IT OFF; then the egg; SHAKE IT OFF; then roll into your breadcrumb mix. Get each nugget nice and coated place onto a lightly oiled baking tray.
Drizzle a touch more oil over the top for added crunch and into the oven for 20-25 minutes. Turn them over halfway so they are lovely and golden on both sides. Enjoy!
