May the force be with you and these delicious oat cookies. Soft and chewy in the middle with a crumbly crunch on the outside.
Ingredients
- 3 tbsp butter, room temperature
- 85g brown sugar
- 50ml honey
- 1 egg
- 1 tbsp water
- 70g whole grain flour
- 1/2 tsp salt
- 1/4 tsp baking powder
- 200g porridge oats
- chopped dates, figs, nuts, raisins, chocolate chips (optional)

Preheat oven to 180°C/350°F/gas 4.
Line a baking tray with greaseproof paper.
Beat together the butter, brown sugar, honey, egg and water thoroughly (even easier if you have a mixer with a paddle attachment).
Mix the whole grain flour (or plain is fine), salt, baking powder and oats. Add to the beaten wet mix and combine. You can also drop in any additional ingredients you’ve chosen such as fruits, nuts or chocolate chips.
Spoon heaped teaspoons of batter onto the lined baking tray and bake for 12-15 minutes until golden. As they cool they’ll harden around the edge but stay soft and chewy in the middle.
