Cheese Straws

Nostalgic cheese straws have had an upgrade with this delicious homemade recipe. So easy, fun for kids to make too and a proper party pleaser.

Ingredients

  • 300g plain flour
  • pinch salt
  • 200g cold unsalted butter, diced
  • 150g mature cheddar cheese
  • 50g freshly grated parmesan cheese
  • ½ tsp mustard powder
  • ½ tsp paprika
  • 2 large free-range eggs, yolks only

Preheat the oven to 200°C/400°F/gas 6.

Sift the flour and a pinch of salt into a bowl. Using your fingertips, rub in the cold cubed butter until all the lumps are gone and the texture is like fine breadcrumbs.

Finely grate the cheese and stir into the flour and butter with the mustard powder, paprika and egg yolks. Add 4-5 tablespoons of cold water and mix to a firm dough.

Roll it into a rectangle on a floured surface. Make it 1cm thick and then slice into 1cm sticks. Carefully pop your sticks on lined baking trays and bake for 10-15 minutes, until crisp and golden.

Leave to cool before eating and they’ll hold their shape.
