Spicy Cauliflower Bites

A spicy little side dish or a fab snack, these Cauliflower Bites are a deliciously simple and super healthy recipe.

Ingredients

  • 2 tbsp extra virgin olive oil
  • 2 tsp chilli flakes
  • 2 tsp ground cumin
  • 2 tsp turmeric
  • 2 tsp ground black pepper
  • 1 tsp sweet smoked paprika
  • 1 cauliflower
  • 250ml boiling water
  • 1 tbsp vinegar
  • 1/2 bunch fresh coriander
  • salt for seasoning
  • natural yoghurt to serve

  • 1 cauliflower
  • 250ml boiling water
  • 1 tbsp vinegar
  • 1/2 bunch fresh coriander
  • salt for seasoning
  • natural yoghurt to serve

Heat the oil in a frying pan on medium heat. Stir in your spices and fry for 2-3 minutes – release those fragrances! Cut your cauliflower into mouthful sized florets and add to the pan. Stir to coat.

Add the water and vinegar to the pan with the cauliflower.  Bring the pan to the boil, then reduce the heat and simmer for 5-6 minutes or until the cauliflower is tender.

Remove the cauliflower and toss with freshly chopped coriander before serving.

These are particularly delicious dipped into natural yoghurt seasoned with salt and pepper.
