- 3 carrots, skin on
- 1 stick of celery
- 1 cm ginger, grated
- 1 tsp cayenne pepper
- ½ tsp turmeric
- salt & pepper, to season
- 1 slice of white bread
- 1 heaped tbsp natural yoghurt
- 200 ml vegetable stock
Grab yourself a soup-er blender!
Add all of your ingredients into the blender, giving them a rough chop beforehand to give your blender a head start.
Blitz into a fine soup and decant into a saucepan. Sit on the hob with a lid for a minimum of 15 minutes to warm through and soften. If you prefer a finer soup, you can strain it. If you prefer a looser soup, top it up with more vegetable stock.
Serve with a slice of bread and enjoy!
