Baked Oats

Winter breakfasts are better when they're warm!

Ingredients

  • 100g porridge oats
  • 1 tsp baking powder
  • Pinch of cinnamon
  • 1 ripe banana
  • 1 lemon, zested
  • 2 eggs
  • 1 tsp maple syrup
  • Big handful of blueberries
  • Handful of flaked almonds

Preheat your oven to 180°C/350°F/gas 4.

Put all of the ingredients except the blueberries and almonds in a blender and whizz them together. Pop in the blueberries and give it a mix.

Decant into some ramekins and sprinkle with the almonds. Bake for 20 – 25 minutes. Watch them puff up and go gorgeously bronzed, and you’re good to go!
