Artichoke & Mascarpone Pasta

Ingredients

  • 200g casarecce pasta (or your preffered type!)
  • 280g jar of marinated artichokes
  • 150g mascarpone cheese
  • Salt and pepper to taste
  • Grated Parmesan cheese (optional)
  • Fresh parsley for garnish (optional)

Cook the casarecce pasta in a large pot of salted boiling water according to package instructions until al dente. Reserve a cup of pasta water before draining.

While the pasta is cooking, drain the marinated artichokes and add to a blender with the mascarpone. Blend until smooth. If needed you can loosen with some water or some of the artichoke oil.

Once the pasta is cooked, drain and add back to a pan with as much sauce as you desire. Add a splash of the reserved pasta water to the skillet to loosen up the sauce and create a creamy consistency. Toss the pasta in the artichoke mascarpone sauce until well coated.

Season with salt and pepper to taste. If desired, sprinkle some grated Parmesan cheese on top and fresh parsley.
