An apple coleslaw recipe that is both healthy and delicious, featuring crisp apples, crunchy cabbage, and a tangy dressing.
Ingredients
- 1/2 pointed spring cabbage, finely shredded
- 1/2 red cabbage, finely shredded
- 2 carrots, grated
- 3 jazz apples, cored and julienned
- 5 tbsp mayonnaise
- 1 heaped tsp Dijon mustard
- 2 tsp cider vinegar
- season with salt and pepper
- 1/2 pointed spring cabbage, finely shredded

Add your shredded cabbages, grated carrot, and thinly batoned apple to a bowl and mix.
In another bowl mix together your mayo, mustard, vinegar and season to taste.
Pour into the veggies and mix altogether to max a crunchy, light and delightful summer slaw!
