Anchovy Pasta

Si's easy, speedy anchovy pasta! With a few basic staple pantry items, a true feast can be ready in minutes.

Ingredients

  • 400g spaghetti
  • 8 anchovy fillets in oil, roughly chopped 
  • 6 garlic cloves, crushed 
  • 2 tbsp capers
  • 1 tsp chilli flakes 
  • 1 lemon, zest of
  • 1/2 bunch fresh parsley, finely chopped

Add your pasta to boiling salted water and cook until al dente (often 2 minutes short of packet instructions).

Heat the anchovy oil in a pan and add your anchovies and garlic. Gently fry until starting to colour, then add your caper, chilli flakes and the cooked pasta.

Chuck in some of the starchy pasta water which will help create a glossy, creamy sauce. Then in. with your lemon zest. and parsley.

Give everything a good toss to coat and voila!
