- 250g cooked orzo pasta
- 2 roquito peppers, de-seeded and roasted
- 1 clove garlic
- ½ red onion
- 20g fresh chives
- 20g fresh basil
- olive oil
- sea salt
- cracked black pepper
Cook your orzo pasta as per packet instructions. Finely chop your garlic and red onion and add to a pan on a medium heat, to soften. Drain your roquito peppers and roughly chop, adding to the pan, too!
Drain your orzo pasta and add to the pan once your vegetables have softened.
Chop your chives and shred your basil, adding to the salad with a generous glug of good quality olive oil and salt & pepper to season.
