  • 100ml buttermilk
  • 120g plain flour
  • 1tsp baking powder
  • ¼tsp salt
  • 50g sugar
  • 1 heaped tbsp honey
  • 50g melted unsalted butter
  • 1 egg
  • ¼tsp grated nutmeg
  • ½tsp vanilla extract
  • 5tbsp whipping cream
  • 200g icing sugar
  • ½tsp vanilla extract
  • food colouring

Combine your buttermilk, flour, baking powder, salt and sugar in a bowl and mix with a fork to combine. Add the honey, melted unsalted butter, 1 egg, nutmeg and vanilla – you’ll be left with a loose batter.

Decant your batter into a piping bag and pipe into a doughnut tin (about a third of the way full).

Pop into a preheated oven at 170°C/325ºF/gas 3 for 11-14 minutes. Once they are golden brown and spring back to the touch, they’re done! Leave to cool and prepare your icing.

Mix the cream, icing sugar and vanilla together until smooth, divide between 4 bowls and colour them red, blue, purple and white. Pop it back into one large bowl and marble the colours together.  It should be of a soft butter cream consistency – add more icing sugar to stiffen, if required.

Once your doughnuts have cooled then dip, swirl and enjoy!
