Serves 2-4 | 10 minutes prep | 15 minutes cooking

  • 450g new potatoes 
  • 2 tbsp mayonnaise 
  • 1 tbsp white wine vinegar 
  • 1 tbsp dijon mustard
  • 1/2 tsp caster sugar
  • radishes and pea shoots for garnish

Pop your potatoes in a pan and cover with boiling water (straight from the kettle). Generously salt the water. Bring up to a boil and then drop down to a simmer for 12 minutes. 

Combine your mayo, vinegar, mustard and sugar in a bowl. Dice your radishes for garnish. 

Drain your potatoes and drop into cold water to bring down to room temperature. Once cool, dice into quarters, pour over your sauce, mix it all up and voila!
