SERVES 12 | 5 MINUTES PREP | 10 MINUTES COOKING

  • 170g wholemeal self-raising flour
  • 170g plain flour
  • 1/2 tsp bicarbonate soda
  • 1/2 tsp salt
  • 280ml buttermilk 

Bicarbonate (alkali) reacts with the buttermilk (acid) to create carbon dioxide which is what makes your bread puff up. Mix it all together and knead it* and then it’s ready to use. Roll is out to a thin crust (the thickness of a coin). Olive oil in a pan on a medium heat. Pizza dough in pan, once it’s turned a light golden brown, flip it and immediately top it. Pop under grill and it’s done!

*So at this point, if you wanted a soda bread, you knead it as little as possible. Flour a baking tray and pop the dough in the middle. Score deeply (so the heat can penetrate the centre of the dough) with a cross on the top and bake in the oven at 200°C for 30 minutes or until you tap the bottom and it sounds hollow.
